Totally Delicious Dark Chocolate Banana Loaf

This is such a quick and easy recipe, even the kids can make it!
Sometimes you just fancy something FEEL-GOOD to eat, and this definitely hits the spot.

Usually we always have a few bananas in the kitchen heading to the DARK SIDE πŸ™‚
Our kids would rather throw them in the bin … NO WAY!
Get them involved, get them mashing … they’ll love it and have fun too, and they certainly love the end result! ha ha!

What more could you want in a recipe? bananas (I LOVE ‘EM) and CHOCOLATE, YUM!
In this recipe you don’t have to be too exact. You could use 2 or 3 bananas depending how much flavour you want to come through, and the same for the chocolate – break off some chunks (DARK or LIGHT, either will work well) and EAT a few to get a smile on πŸ™‚

Just before making this, my wife made a Carrot Cake, so I thought I’d ask the kids which they would prefer, HERS or MINE ?
Kids being kids, and being fussy … CAN YOU IMAGINE … kids eating a cake made with CARROTS! REALLY! Oh how we laughed πŸ™‚

As you fold in the flour, you might start to think, HEY this is getting a little thick (I DID!) I asked my wife just to double check!
Don’t start adding water or any other liquids, IT WILL BE A OKAY!

I love a Banana Loaf (Cake) and adding a little (or a lot) of chocolate just gives it that little extra, CUDDLE factor!
Just sit back and tuck into that yummy chocolatey banana loaf. I guarantee that within a couple of days it will all be gone!

Description

A delicious Banana Loaf with added Dark Chocolate. It has a wonderful crust on top and a lovely chocolatey taste. Such an easy recipe to make, really tasty and certainly never lasts long enough in our house!

Ingredients
  • 75 g Butter (3oz)
  • 100 g Brown Sugar (4oz)
  • 1 Large Egg (Beaten)
  • 2 Ripe Bananas (Ripe)
  • 225 g Self Raising Flour (8oz) (Wholemeal)
  • 1/2 tsp Ground All Spice
Instructions
  1. Pre-heat your oven to 190 c (Gas 5)

  2. Peel & mash your bananas into a small bowl. The riper they are, the easier they are to mash with a fork.

  3. Melt the butter. Just pop in the microwave for a few seconds.
    Add the melted butter into your mixing bowl.

  4. Crack the egg into a separate bowl to prevent getting any shell in your mixture.
    Then beat your egg. Add the sugar & beaten egg to the melted butter. Mix well.

  5. Add your mashed bananas (no worries if still a little lumpy)
    Add your ground All-Spice

  6. Slowly fold in your flour. Make sure you do not mix too much otherwise your loaf will sink when you remove from the oven. 

  7. Melt the dark chocolate in the microwave for a few seconds (put aside).
    Separate half the cake mixture into another bowl and slowly mix in the melted chocolate

  8. Rub butter over some greaseproof paper to make sure it does not stick to the cake, and place in your loaf tin. Do not worry if it sticks out over the sides.

  9. Spoon some of the mixture into the tin leaving spaces to spoon in the other half with the chocolate. 

  10. Spoon in the additional chocolate mixture

  11. With the back of your spoon, make sure the mixture is evenly spread in the tin.
    Lift the tin, and tap a few times on your counter to make sure sure there are no spaces in the tin.

  12. Place it in the oven, and bake for approx 35-40 mins.
    Remove and test with a knife after 35 mins. If mixture remains sticky, bake for another 5 mins. Keep testing until done. Once cooled down a little, sieve some Icing Sugar on top, serve & enjoy πŸ™‚

Recipe Notes

It helps if you can pre-measure all the ingredients first so that you have them all to hand. Melt the chocolate just before you needΒ it, otherwise it may start to set in your bowl.

Serve with fresh fruit or ice-cream.
